I have tried every thing in the support listings to get the new version of itunes (11.0.2) to find my ipad2 and it wont, any help please????

Is there anyway to remove the "undo" from the screen keyboard? That stupid button has cost me a page and a half of notes. And no, the "redo" didn't bring the notes back.
The subject says it all any way to lose the stupid "undo" button from the keyboard? O maybe get my notes back?
