Yes, GSM is the system used by AT&T and most of the world. CDMA is the system used by Verizon, and some of the other smaller US-based carriers. Buying the AT&T model will make life much easoier for you.
If you are using an iOS device, the ampersand, &, almost always ends up coming through as &...regular users know that and just ignore the little quirk.
